Big J's Awesome Weekend

For those of you who have read my blog for any length of time, you know that my hubs is a runner. He loves to run and I am so proud of him. This weekend Jon and a few members of the gym we go to competed in a marathon relay and placed first!! FIRST!! (Marathon relay is where you run x amount of miles and then hand off the wand and the next person runs x amount of miles and so on until you reach 26.2 miles.)

He also ran for his work team AND ran an additional x amount of miles to get in his 20 miles for his marathon training. Yes, yes, complete nutter. Next month he will run his very first marathon and I'm so excited for him. Brings tears to my eyes just thinking about it.
I know I need to start packing my real camera and stop taking cell phone pictures. Yep that's a Mohawk, his signature running do and yep that's a camo-jacket-mullet-wearing-no relation-to-us-gentleman sitting behind him. Gotta love Ohio.

Fashion

I just love El's fashion! Just fearless!!

She came running down stairs with a big smile on her face this past Sunday. Life is always better when you wake up with a smile. I know when I put her to bed she had on her pjs and when she got up she looked like this. She promptly told me she did it in her sleep. Oooo that explains it, I told her she had to put some pants on before we go out. Siiiigh I know such a party pooper but she still wore the cute tutu (Leah made for her) over her pants and life was still good. I wonder if the guys at work would look at me differently if I wore a tutu over my pants? =)

Tofu Tuesday

Big J discovered these at the grocery store:
They are pretty tasty I do have to admit! I was a little hesitant to try them but was shocked that they tasted sooo good. I slabbed a little avocado on them and maybe a touch of ketchup...I know...and it was yumo! Didn't taste all tofu-ey promise!
I need new dishes in a bad way...maybe I'll tell Santa. =)

Birthday Dinner

For a cell phone picture it's not too shabby. I was a good girl and didn't order a giant piece of chocolate cake...although I wanted to.
I did have a yummy veggie burger and plenty of fries...had to indulge a little. =)

Happy Birthday to Me!

Because we are a busy working family, Jon asked me if we could celebrate my birthday last night instead of today. With his marathon training, and I have PTO meeting at El's school... I humbly obliged...who doesn't like getting presents early?
Elly picked out a pretty black dress for me. She was so excited for me to open my gift, jumping out of her skin! I thrive off her excitement.It's cute!! Thanks Elly! XOXO

It's Friday

Pool Party

YAY!!! It's pool day!! Let's go swimming!! Where's all the kids? School started early I guess...or their parents said they could go because it was cloudy and a little nippy. =)"It's so cold Kac...brrr!!"...wuss! We were the only people in the pool for the entire time we were there. However the lifeguards felt it necessary to blow the whistle every 45 minutes and have Elly get out of the pool for 15 minutes for "Adult Swim"...as if. Never fear she had fun playing in this little water park area. It was pretty cool, watching her go from station to station just having fun.It's coming...it's coming! SPLASH!! The buckets fill with water and tip...watch the video closely, it's right in the beginning.

No matter how many times you say don't run....they run.
Eating some lunch, mmmm cookies are the best part!

Bunch of sissies, HA! It wasn't that cold, honest! Okay maybe a little, see told ya Jon we should move back to warmer climates. He never listens.

Jon didn't want to go back in after lunch so I jumped in and played...we had such a great time! Can't wait for it to reopen next year!

Tofu Tuesday

So I've been neglecting my Tofu Tuesday for awhile...why you ask?

Well...
a) salads and boca burgers have been my staple dinners lately
b) uninspired to venture and try something new
and
c) eehhh I don't feel like it. =)

Saturday night however I made a most fiber-o-so-licious meal.

Mashed Cauliflower and Veggie Loaf

*Stay with me, don't judge! It's really good!*

Cauliflower is easy peasy...break apart the veggie in smaller pieces

Boil until tender, drain and mash (with a smidgen of milk). Add salt/pepper/butter to your liking!
Next my veggie loaf...Boca website is where I originally got this yummyness from however I've adapted it to my liking. =)First cut all your veggies...I use celery, onion and carrots.Next microwave your crumbles for about a minute or two(yes I know I'm using a different brand but they were on sale) .Add to the same bowl as your crumbles the egg, BBQ sauce and bread crumbs (I can't for the life of me find natural bread crumbs that do not have chicken in them so I used croutons). Sorry for the blurriness thought it was clear when I took it. Awhh well.Mix everything together and smush it in a loaf pan! Bake at 350 for about 40 minutes and then drizzle a bit of good ol ketchup on the top, bake for a little bit longer...mmmm! (Gonna hafta fire my photographer...as if...but isn't my shirt cuttte?! Kohls my new favorite store!)
Ta da!!! Veggie loaf, mashed cauliflower and a yumo salad...very satisfying dinner! Don't judge my dishes I'm trying to convince Big J we need new one's but he won't budge yet. Never fear he'll come around. =)

Kindergarten update

Oooops I forgot to give an update over the weekend about Elly's first day of kindergarten. She was so excited to go that she would barely pose for a few pictures. Don't fret a little bribe here or there and I got what I wanted. HA! Now I don't wanna brag but I think she was the cutest kid in the class and stylish...gotta love the orange bracelet!!

Last pep talk from Daddy!! This picture still makes me teary eyed.And I cried after this was taken...but I wasn't the only one. Big Bad J had a few tears too.I know, I know but it is mean, just MEAN, to not let us walk our child the first day of kindergarten to her class....JUST MEAN! She walked all nervous and everything to her classroom. Cry!Longest hallway ever...keep going El you're almost there!

And yesterday she had her first homework assignment! Who knew she loved pink and puppy dogs? =)
