Bring Your Pooch to Work Day
My co-worker/friend Lori is watching Sarah while I'M ON VACATION!!! 
Don't be jealous! Okay be jealous cause I'm going to be having so much fun! HA!
So...my boss let me bring Sarah in and she was a good girl and protected me while I worked...she barked and licked the men in my office if they got too close. Such a fierce doggie! Get em Sarah...lick, lick, slurp! Whatever Cujo!
I guess the Winnie the Pooh blanket doesn't help her look real fierce does it? Eh whatever...anyways MICKY MOUSE HERE I COME!!

Tofu Tuesday
An Oldie but Goodie or Goody or Goodiey...hahahaha!! (My sister is cringing I can see it...she's a teacher and hates my spelling errors...sometimes I do it just to annoy her. What's a little sister for anyways?)
Here's what you need:
1 serving chocolate Jell-O sugar free pudding or be lazy like me and just buy the snack cups! 
3 mini caramel corn rice cakes
1-2 pretzels un-salted (or you can pick the salt off...I don't like the salted for this recipe)
1/2 sheet low fat honey graham crackers
Cool Whip
Okay now all you need to do is take a baggie and put in the rice cakes and pretzels and smash em' up to you liking. Pour over the pudding and add a dabble of cool whip. YUM!
Try different flavors...mix it up a bit...ooooh vanilla pudding with apple cinnamon rice cakes...total yum too!

My lunch yesterday was soooo good. Yes it was a salad, but it was the best salad ever. Here's what I put in it:
Avocado, soy chicken, cucumbers, carrots, romaine lettuce, spinach, and topped it with berry salad dressing and some crunchies (onion straws but croutons are good too).
I've been so busy at work that I've had to eat at my desk...sad but true. I pack my lunch the morning before (my parents are beaming now!) in one of these. So cool! Seriously couldn't finish the whole salad. So yummy though.

Tofu Tuesday
Ugh sorry, sometimes life just gets busy and I don't have time to write. Gasp! I know it's true though...or sometimes I forget my work keys and have to wait 45 minutes till the next person shows and bam lost all my blogging time. HA! Three people yesterday called me and asked if everything was okay...yes everything is fine...oh cause you didn't blog today. DOH!
Anyways on with my brilliant (or Big J's) recipes.
Big J can be a total genius at times and comes up with yumminess! He took one of these sausages cooked it thoroughly and then warmed up some marinara sauce. Then toasted a light hot dog bun, lightly buttered and seasoned. Seriously took all of 5 minutes. Placed the sausage in the bun, poured the sauce over it and topped it with some fat free cheese! So yumo you'll never guess it was meat free. Try it you'll love it!

Tofu Tuesday
Ketchup
Isn't everything better with ketchup smeared all over it?? Mmmm yum-o! Ooo I have a true story for you. Okay so when Jon and I were dating, (well we dated for awhile because well...wait that's another story for another time) I got all jazzed about making tacos for him. I got the tortillas, cheese, meat (gag), all the fixings. We were just sitting down to eat and I had forgot something...ketchup! I came back to the table with my ketchup and started putting everything in a big bowl and then took my ketchup and started pouring it on the top. He looked at me with horror and asked, "what the hell are you doing, you're ruining the tacos!!" I looked at him surprised and stammered, "bu...bu...but that's how my Mom does it." He took my ketchup bottle away before I did any more damaged and made himself a few tacos and then gave it back. Shocked and befuddled I smear the ketchup all over my tacos and ate them. Eh whatever boys are weird.
This weekend nothing made me more proud then when I saw this:
"Want some Mommy? It's good."
Sorry child I have to draw the line somewhere.
Jon just rolled his eyes.

Compact Laptop versus iPhon-ator
It's with a heavy heart that I tell you that my former lover named Compact Laptop or CL for short, died last Tuesday. It was a quick and painless death, I plugged my other lover, iPhon-ator, in him to update some software and they fought. Oh did they ever fight...one wanted to this, one wanted to do that...I screamed, "I LOVE YOU BOTH...STOP FIGHTING OVER ME...I HAVE ENOUGH LOVE TO GO AROUND," but they didn't listen. The iPhon-ator won and *sniff, sniff* CL died right before my eyes. Visitation will begin tomorrow morning starting at 8am with the funeral starting at 1pm, please make all donations to me as soon as possible because let's face it, Big J is cheap and doesn't think we need to replace CL right away. He said that while CL was still warm, I covered his little speakers so he wouldn't hear it. HEARTLESS!
