So I've been neglecting my Tofu Tuesday for awhile...why you ask?
Well...
a) salads and boca burgers have been my staple dinners lately
b) uninspired to venture and try something new
and
c) eehhh I don't feel like it. =)
Saturday night however I made a most fiber-o-so-licious meal.
Mashed Cauliflower and Veggie Loaf
*Stay with me, don't judge! It's really good!*
Cauliflower is easy peasy...break apart the veggie in smaller pieces
Boil until tender, drain and mash (with a smidgen of milk). Add salt/pepper/butter to your liking!
Next my veggie loaf...Boca website is where I originally got this yummyness from however I've adapted it to my liking. =)
First cut all your veggies...I use celery, onion and carrots.
Next microwave your crumbles for about a minute or two(yes I know I'm using a different brand but they were on sale) .
Add to the same bowl as your crumbles the egg, BBQ sauce and bread crumbs (I can't for the life of me find natural bread crumbs that do not have chicken in them so I used croutons). Sorry for the blurriness thought it was clear when I took it. Awhh well.
Mix everything together and smush it in a loaf pan!
Bake at 350 for about 40 minutes and then drizzle a bit of good ol ketchup on the top, bake for a little bit longer...mmmm! (Gonna hafta fire my photographer...as if...but isn't my shirt cuttte?! Kohls my new favorite store!)
Ta da!!! Veggie loaf, mashed cauliflower and a yumo salad...very satisfying dinner! Don't judge my dishes I'm trying to convince Big J we need new one's but he won't budge yet. Never fear he'll come around. =)

Mmmm, I'm such a picky eater...and so are my kids. I'm not sure how well this one would go over in my house!
Actually sounds pretty good, but there's no chance, in this lifetime, that I'd get hubby to eat it. (He won't even eat regular meatloaf, let alone fake meatloaf...lol)
You should be proud of me Kaci, I bought VEGGIES this week!! And the girls are LOVING the fruits too!!
No judging here, looks good to me! It took an accident for my hubby to decide to change his diet. Now, he requests the strangest things (to him) He loves hummus and tomato sandwiches.
I've got cauliflower in the fridge. I'll try the cauliflower mash tonight ;)
