Tofu Tuesday

Mashed Cauliflower Taters

*1/2-1 pound of cauliflower

*Spray butter

Makes 1-2 servings

I'm a busy Mom so I'm going to give you the quick/short version. Do you have a microwave steamer? What are you waiting for go buy one now! Then come back and microwave your cauliflower for about 5-10mins (every microwave is different), drain the water and mashed the veggies. You may want to add a bit more water depending if you like the texture more runny or chunky...personally I like a bit of chunk. Add a few squirts of the spray butter and bam mashed taters, oops I mean mashed cauliflower taters!! Swear it taste just like em but score they are healthy for you!



Don't forget Biggest Loser is on tonight...yawn...I may stay up for it but holy 3 hour finale batman! 4:40am just comes way to early for me. Happy Tofu Tuesday!

That steamer is awesome, wonder if I could just use a colander and a pyrex dish of water. Going to try, I LOVE cauliflower.

I totally saw something similar to this on "Cook yourself Thin" they just mixed em with real taters. So, I might just have to try it!
