Tofu Tuesday

I frequent a lot of food websites...anything from Martha Stewart to Weight Watchers to The Pioneer Woman Cooks (boy is her stuff good, but not good on the hips!)

I found this recipe and my mouth is just watering. If you know me you know I big puffy heart L-O-V-E salsa. Take a look:

Watermelon Salsa:

4 cup(s) watermelon, seedless, chopped into small pieces
1 cup(s) cucumber(s), seedless, chopped into small pieces
1/2 cup(s) scallion(s), chopped into small pieces (green and white parts)
1/2 large yellow pepper(s), chopped into small pieces
1 large jalapeƱo pepper(s), seeded, finely minced (do not touch seeds with bare hands)
1 1/2 tbsp cilantro, fresh, minced
1 1/2 tbsp mint leaves, fresh, minced
1 tsp sugar
1 tbsp olive oil
1 tbsp fresh lime juice

Instructions:
Toss all ingredients together in a large bowl. Serve at room temperature or chilled. Yields about 1/2 cup per serving.

Oh baby where's my chips? Or big huge salad...hell where's my spoon? Enjoy!

A Tag and an Update

My new bloggy friend Amber tagged me. Check out her blog it's totally cute!! It's been a long time since I've done a tag so here goes.

8 Things I'm Looking Forward To:
1. Kickboxing tonight (phone call free, I hope!)
2. 3pm today (off work for three days)
3. El’s eye appointment tomorrow...just looking forward to it being done and over with.
4. Size 8…wait size 6! HELL size 2!!! HAHA!
5. Spending time with El, just us two tomorrow after all the errands
6. Moving back to the West Coast
7. Hopefully having another child
8. A date with my hubs

8 Things I Did Yesterday:
1. Called the hospital where my Dad was at.
2. Pretended to pay attention at work.
3. Sighed a huge sigh of relief that Dad was home.
4. Played a game with Elly and hubs…they beat me.
5. Went grocery shopping a lil.
6. Ate a ice cream sandwich.
7. Put eye drops in Elly’s eye…appointment on Friday.
8. Went to bed early...bliss!

1. Be in California!
2. Run a marathon…some day.
3. One pull up unassisted.

Now an update:

Dad made it home safe and sound yesterday. I'm so happy that he is home!! Things could have been a lot worse and I thank God that it wasn't. I told my Dad to look at the bright side...now when I'm driving home from work (1 hour give or take) he and I can talk EVERY SINGLE DAY! Dead silence...crickets chirping...Dad? Hello? :)

Okay it's my blog and I'll cry if I want to!

So yesterday I was in my kickboxing class, getting my sweat on, and my phone was ringing off the hook! First it was my sister Candee, then it was my sister in law Colleen, then my sister again, then Big J, then a few texts. Okay I'm almost to cool down just a few more minutes....then Big J comes walking into the class. What the, what the??!?! Okay something must be up.

Found out my Dad was injured at work. My Dad is a timber faller and I'm not exactly sure how it all happened but the chainsaw came down on his leg below his knee.

YIKES!
He went to the local hospital in my home town and then taken to another hospital for surgery. My Mom called late last night after the surgery and told me he severed the patella tendon and cut into the bone a bit. (Gives me the willys thinking of it) He stayed the night at the hospital and was given antibiotics in case of infection.

Please pray for my Dad for a speedy and pain free recovery. He'll be in crutches for three months and physical therapy for a good while.

I'm a vegetarian, not vegan (meaning I eat/drink milk products), and more importantly...I'm a losing weight-vegetarian, making healthier choices for my family type of Mommy, I am woman hear me roar!
